Multiple Uses of Nitrosamine Testing in the Brewing Industry

NDMA is a known animal carcinogen and is produced as a biproduct during the kiln drying phase of the malting process. Whilst techniques are utilised to minimise the formation of nitrosamines low levels of carcinogens may remain. To regulate the exposure of nitrosamines from the consumed liquid it is vital to monitor levels of NDMA within the malt and the final product. This can be achieved using the Ellutia 800 Series Thermal Energy Analyser (TEA) interfaced with a gas chromatograph. Its simple operation, very high sensitivity and very high selectivity for nitroso compounds makes the TEA a superior choice of detector for this application.

Brewing plants should be caustically cleaned on a regular basis. The effectiveness of cleaning can be assessed by analysing the levels of apparent total N-nitroso compounds (ATNC). This acts as measure of microbiological contamination; as a source of the N-nitroso compounds is from bacteria species with nitrate reductase activity.

ATNC does not require speciation, therefore a GC is not required to perform separation prior to analysis. Ellutia has developed a glassware interface for the 800 series TEA which streamlines the analysis process. This method is included in industry standards set by food safety certification schemes, such as SALSA
